Last newsletter I may have criticized Taylor Swift and let me just say that at least with her song Majorie I can understand the hype, sorry Taylor.
I feel like I will just always keep saying in any letter to another that this year has been weird, but it has! So while this year has been weird, I hope your holiday season was as good as it could be.
I spent a lot of my holiday week focusing on pie crust orders, and since I was in Studio C, I ended up making a lot of extra pastries. I never posted about this because majority of my pie crust orders filled the slot for a special large galette I was offering. It was a caramelized onion, cheese, and thyme galette. I knew I was going to need to slice 10lbs of onions so I finally caved and purchased myself onion goggles. I used them at home and I could have cried, but NOT from the onions. Why didn’t I buy these sooner?! Look at the prescion in my diced onions. However when I sliced the 10lbs worth it was the weirdest sensation to feel it in my nose but not have my eyes burning and crying. Overall, what I’m trying to say is if you cut a significant amount of onions, look into these goggles!
Some newsletter only news, I’ll be at Studio C this Saturday instead of my normal Thursday. I have quite a bit of Parmesan and thyme, so definitely be expecting that in a lot of items. I will also be at Rabble Coffee Monday morning. I’m excited to offer a small batch of doughnuts at 6am again! If you’ve followed me from the beginning, you’ll remember that Studio C used to open at 6:30, and I was definitely reaching a different crowd at that time. While I don’t miss getting up at 3am, I do miss those people who initially supported me. I’m also fulfilling a personal goal of working with all the Indy coffee shops I’ve come to admire.
Brick and Mortar news. I’ve decided to not push my GoFundMe until I can share more details about the space I’m looking at. The great news to me is that if nothing works out for me, the way I see it through a lot of people’s generosity I’d at least be able to buy a bigger mixer and have enough funds to get going when another building presents itself. This one I have in mind just seems too good to be true, so earlier in 2021 I should be able to give more details about the space I want!
